There is an old, tired joke every vegetarian in India has heard at least a dozen times from their meat-eating friends: “Kya ghaas-phuus kha raha hai?”
Plant-based food has always been pigeonholed into two extremes. On one hand, you have the comforting staples like your daily dal khichdi and Udupi restaurant dosas. On the other hand, when local joints try to get fancy with vegetarian burgers, they usually resort to deep-fried potato or paneer, drowned in an absurd amount of plain mayonnaise.
When Yash Hegde, the founder of ‘Leafy Boi’, set out to create a gourmet vegetarian burger joint, he wanted to change that narrative entirely. The name itself was born out of a moment of unapologetic dissent. After hearing his friends poke fun at his "leafy" diet for the hundredth time, he thought, “why not just own it?”
"When we talk about burgers, vegetarian burgers only ever meant two things: potato and paneer. That was it. So as a vegetarian brand, I felt, 'Man, we need to do something different, offer something new.' We shouldn't be limited to just potatoes and paneer,” he says.
So, the strategy was an obsessive approach to a culinary craft. The kitchen experiments with raw bananas, zucchinis, beetroot, rajma, soybeans, and mushrooms, while actively developing new ideas like aubergine-based patties and rich avocado sauces. Plus, instead of layering a burger in standard mayonnaise, it relies on a carefully calibrated two-sauce system. The first is an elevated mayo-based sauce infused with bold, distinct flavors. The second is completely mayo-free, offering a sharp, tangy counterpoint.

That relentless focus on flavor has paid off in ways the founder never saw coming. Going in, the assumption was that a trendy gourmet burger joint would mostly attract a young, college-going crowd. “When every generation of people enjoys food at your joint it makes you feel like people are open to trying new stuff. This is new India; this is what people like eating outside, people like trying new stuff, they want to experiment,” he notes.

It turns out that when you stop treating vegetarian food as an afterthought or a compromise, people of every age and diet are more than willing to take a bite.
